ABOUT THIS COFFEE

Bright, vibrant and bursting with citrus, Helios brings together the juicy sweetness of orange Starburst, the sharp zing of lime and the crisp, tangy bite of redcurrant. A lively, fruit-forward cup with a refreshing finish, this limited-release coffee really shines with its zesty character and beautifully balanced body. Named after the Greek god of the Sun, Helios captures the coffee’s radiant, energetic personality. Produced by Benancio Chavez and the SIPRO association in Chiapas, Mexico, this special lot represents the work of a new generation of producers building stronger relationships with roasters and creating better opportunities for their communities.

ORIGIN

From Amatenango de la Frontera in Mexico’s Chiapas region, this lot is produced by Benancio Chavez, a member of SIPRO — Sierra Productora de Café. Sitting close to the Guatemalan border, the region shares its mountainous terrain and ideal coffee-growing conditions with neighbouring Huehuetenango, an area renowned for exceptional specialty coffee.

Founded by nine predominantly young producers, SIPRO brings together a close-knit network of coffee-growing families with a shared ambition: to improve quality, strengthen their position in the specialty market and secure fairer returns for their work. By building direct relationships with buyers rather than relying on local intermediaries, the association is creating new opportunities for its members. This small, carefully selected lot offers a glimpse of the exciting potential coming from a new generation of Mexican coffee producers.
