ABOUT THIS COFFEE

Our second release from MIÓ, Cornela is a celebration of place, process, and modern coffee craft. Launched at Nordic Coffee Fest, it inspired a light Nordic roast approach – designed to highlight clarity, vibrancy and effortless drinkability.

Sourced from Mundo Novo plots planted in the rolling hills of Minas Gerais, Cornela undergoes an extended 72-hour yeast fermentation using carefully selected overripe cherries. The result is a cup that leads with a luxurious, silky salted caramel richness, coating the palate from the first sip and lingering long after the last. Layers of rich dark chocolate deepen the sweetness, while notes of raisin and a touch of juicy blackcurrant brightness provide elegant complexity beneath its caramel-forward profile.

Carefully harvested and patiently dried under the Brazilian sun, the coffee is rested and dry-milled to preserve its character and sweetness. Cornela is bright yet grounded, complex yet inviting – a coffee that reflects both its origin and the progressive Nordic approach to roasting.

At the meeting point of the Cerrado and the Atlantic Forest, the Monte Santo de Minas estate unfolds across nearly 2,000 hectares of gently rolling land. Rising from 900 to 1100 metres above sea level, this unique landscape benefits from the influence of two distinct biomes, creating a dynamic and balanced growing environment.

Within this vast estate, 400 hectares of Arabica coffee are carefully cultivated, shaped by altitude, biodiversity and a naturally moderated climate. The result is coffees that are expressive yet composed – rooted in place and defined by clarity, sweetness and depth.
