Grown at Finca Los Pesotes in the majestic mountains of Chalatenango, this exceptional natural Pacamara is produced by William Díaz as part of the Mt. Olympo Specialty Series through the BioKrop Project by Tierra Bendita. Cultivated at over 1,600 metres above sea level, this is William’s debut specialty microlot—a coffee born from dedication, hard work, and an unwavering commitment to quality. With only a limited volume produced, this lot progressed through the early stages of the Cup of Excellence, where its outstanding potential was immediately recognised.

Pacamara is one of El Salvador’s most celebrated coffee varieties, developed by crossing Pacas and Maragogype in 1958. Renowned for its oversized beans and exceptional cup quality, it has become highly sought after for its remarkable sweetness, complexity, and expressive flavour profiles. As part of the BioKrop Project, William receives ongoing technical support, combining ancestral biodynamic farming practices with modern biological innovations to nurture healthier soils and produce exceptional coffees sustainably. The result is a coffee that showcases not only the unique character of Pacamara, but also the exciting future of El Salvador’s next generation of specialty coffee producers.
